A not-so-traditional Coonawarra Cabernet, it's 100% whole bunch and 100% fun.

Inspired by the Cabernet and Coonawarra naysayers.

What: Cabernet Sauvignon.

Where: Coonawarra, known for assumed to not be changing much.

When: 2022

How: 100% whole bunch Cabernet wrapped up for 3 weeks to undergo carbonic maceration. Basket pressed as whole bunches and transferred to older French puncheons for 4 months.

"This is out of the box for Coonawarra and Cabernet. Sees 100 percent whole bunches in the ferment and is produced as a lighter, dare we suggest ‘chillable’ red. Crunchy red cherry and black berry fruited with lashings of green pepper, mexcal and blood orange. A rollicking drink, fun and frisky and totally nails the brief. Great to see this innovation from Coonawarra."
