Inspired by the Cabernet and Coonawarra naysayers.

Where: Coonawarra, known for assumed to not be changing much.
When: 2022
How: 100% whole bunch Cabernet wrapped up for 3 weeks to undergo carbonic maceration. Basket pressed as whole bunches and transferred to older French puncheons for 4 months.
